Recognized in 1948, it is the oldest appellation of origin controlled red in Languedoc. A Mediterranean climate and a clay-limestone soil make Fitou, powerful but flexible wines.
Located in the so-called "Fitou Mountain" area, the Sarrat d'En Sol domain is 30 kilometers from the heart of the mountainous Corbières, where schists dominate and a climate less sensitive to the effects of the Mediterranean. The ambassador grape variety of the appellation, Carignan, fears humidity and cold and needs heat to express itself, this is the reason why we plant it on schist soils but also on quaternary moraines " Régis explains to us. Syrah and Grenache, also present in our 'PDO Fitou wines blends, are respectively planted on clay-limestone and black shale soils. "This diversity of terroirs is very important and makes it possible to produce wines with a particular typicity
